MBS stands for Marble Score. The MBS for any beef is based on the fat marbling throughout the piece of meat. This fat is intramuscular fat and often looks like tiny white veins throughout the meat, which is different to the white layer of fat often found on the outside of a piece of beef. It must be generated by a mix of breed, feed and handling over time - it is not something you can achieve by simply making the cattle eat more food!
Marbling melts during the cooking process and permeates the meat resulting in a silky texture and intense rich flavour.
Wagyu cattle have been bred to attain extremely high levels of marbling fat. The Marble Score scale runs between 3-12 for Wagyu beef. We like to source with meat in the 6-9+ range for the best balance of flavour and tenderness.
