Duck Thai Red Curry

This very tasty Thai Red Duck Curry make the most of our convenient Luv-a-Duck range. It is a simple reheat with a few extra veggies for flavour and taste. It requires no cooking skills at all but will have all the family thinking you have been slaving away at the stove for hours
Needs
1/2 Pack (500g) Duck Meat Red Curry
1 Tin Coconut Milk
2 Kaffir Lime leaves
8 baby corn
1 Zucchini sliced 1cm thick
Small tin lychees or pineapple chunks (optional)
Jasmine Rice and Coriander to serve

Method
Take a medium size saucepan and add 1/2 pack of Red Duck Curry Leg (boneless) including half the sauce. Add coconut milk, bring to just below boiling point on 3/4 heat. Add baby corn and lime leaves (and lychees if including), simmer below boiling for 10 mins, then add Zucchini until it is just soft (5mins).Serve with steamed rice and garnish with coriander
