The Scotch Fillet is a great all-rounder and a favourite among those who like their meat with real flavour. This cut is also known as Cube Roll (or Rib Eye/ Prime Rib when still on the bone). Our Scotchies are grain-fed to pack in maximum taste and texture, which comes from the seams of fat between the two connected muscles. We cut them to an exact size and tie them up ready to roast - but its still very easy to cut them into steaks as well if you prefer
