Porchetta (Pork-et-a) is an Italian culinary tradition created by rolling a flavoursome cut of pork up into a log for slow roasting. It has since been adopted by the Cubans for their sandwich culture too! We use pork belly for maximum flavour and tenderness - and the best crackling in town. It comes rolled, tied with seasoning and scored ready to roast. Although it takes a little longer than you may expect, the results speak for themselves.
The Porchetta is rubbed inside with a mix of traditional Italian spices including garlic, oregano, dried capsicum, salt and pepper.
