This pork shoulder has no skin and the bone in, hence it's a called a Boston Butt. The Boston Butt is THE butchers' choice for slow cooked pulled pork recipes and the smoke pit. Despite its name, it comes from the upper shoulder of the pig and is a heavily worked muscle that means it is deeply coloured and has heaps of flavour.
*These are delivered frozen, but after cooking for 12-24 hours it will not affect the tenderness of the meat at all!
