
These Traditional-style anchovies are produced using a craft process which differs from modern methods use to produce most in olive oil. Salt is cleaned off them with great care and fillet them one by one with a knife, without removing the skin. This gives them a silver hue and conserves all the original, intense flavour of the salting process. They are then marinated in extra virgin olive oil and a touch of parsley. They make an ideal appetizer due to their authentic flavour and original, attractive presentation.
Cantabrian anchovies can be used quickly and easily to create countless dishes, as they combine well with many foods, such as tomatoes, mild cheeses such as Mozzarella or Creme Fraiche, stronger chesses such as both kinds of Idiazabal, garlic and “piquillo” peppers.
